‘Cupcake Wars’ gives Orlando baker a Sweet! showcase

Salmon cupcakes, anyone?

Orlando baker Hollis Wilder puts over that improbable concept in “Cupcake Wars,” which previews at 10 p.m. Sunday on Food Network.

“It’s not something I’ll sell in my store,” Wilder says of the salmon concoction. “It’s one of those cupcakes you make and serve immediately. It was divine — a lemon-scented cake. You bite into the cake. It fills your senses.”

Wilder hopes her appearance on “Cupcake Wars” bolsters her store Sweet! in Waterford Lakes Town Center. The store, which also sells yogurt, celebrates its 2nd anniversary in July.

“I’m from Los Angeles,” Wilder says. “I was a chef to celebrities in Los Angeles. When I moved here, and the Food Network called my store in Waterford Lakes, I laughed my way all the way back to Los Angeles. It’s beyond hysterical.”

“Cupcake Wars” pits four bakers in a three-round contest. In Sunday’s show, the bakers compete for $10,000 and the chance to prepare cupcakes for a charity golf tournament thrown by comedian George Lopez and his wife, Ann. Wilder knows how to please celebrities; she has cooked for Jay Leno, Kevin Costner, Tom Cruise and the Rolling Stones.

Wilder logs a lot of time in the “Cupcake Wars” episode, but she didn’t fix any of the cupcakes she makes at her store. She credits her success to that risky salmon cupcake in the first round.

“It was my chance to think outside the box,” she says. ”I love competing against myself. Yes, it was a competition show, but I need to put myself in a position where I’m fighting to come up with something new.”
